I wanted to bake some cupcakes for a friend who doesn’t eat eggs. Being pressed for time and not having planned this in advance, I took the unorthodox step of starting with a vegan cupcake recipe and replacing the soy milk and soy yoghurt with milk and yoghurt. My apologies to the authors of Vegan Cupcakes Take Over the World, who probably didn’t have this in mind when they developed the recipe. But sometimes you just need an egg-free cupcake in half an hour, without the hassle of trying to work out substitutions.
