I made a simple loaf with a sweet rhubarb filling by first making a dough of whole wheat flour, white flour, salt, lemon juice, sugar, yeast, water and a bit of peanut oil. While the dough was rising, I cooked some rhubarb and some minced ginger in a bit of water and sugar. I drained off the water (which I simply diluted and drank) and let the rhubarb cool. After the bread dough had a second rising, I rolled it out and sprinkled it with sugar and the rhubarb and then rolled it up.
