Noodles with Kale and Rhubarb

I was looking for a savoury rhubarb recipe and found one incorporating noodles and kale. I served with lemon instead of lime, used egg-free “oil noodles”, used agave syrup instead of honey to make it vegan, and added dry-roasted peanuts. The result was okay, but not great. I recommend the rhubarb enchiladas as a superior alternative.
