Cauliflower “Cheese”

I really like how Romanesco cauliflower looks. Just look at the ombre and fractals! Unfortunately it tastes like cauliflower, which I don’t care for, so I’m always looking at ways to perk it up.

I decided to make cauliflower cheese, but using a nut-free cheese substitute. Unfortunately, it was horrible, with a strong taste of raw tofu. Unless you are keen on raw tofu – personally, I only like it fried or with lots of seasoning – I would skip this recipe.

This cauliflower mince does not taste much like cauliflower, and I kept sneaking tastes when I was meant to be preparing other dishes.

Creamy Vegan Pasta with Mushrooms

I used this recipe with cashews in place of hemp seed. I used more wine than the recipe called for and let the mushrooms simmer longer. It was quite creamy and had sufficient flavour, plus I could not taste the cauliflower.  I liked the potato/cashew cream in this recipe better than the bean-based sauce in the creamy summer vegetable pasta.

Chocolate-Banana Smoothie with Cauliflower and Spirulina

On days when I feel like making my dessert smoothie a bit more healthy, I add a handful of frozen steamed cauliflower, a teaspoon of milled flaxseed and a teaspoon of spirulina powder. Because of the strong, sweet flavours I don’t really notice the cauliflower and spirulina as distinct ingredients, only as a reduction in sweetness.

I’ve decorated this bowl with goji berries, blueberries, milled flaxseed and a raspberry.

Cauliflower, Mushroom and Pea Curry

Peas and mushroom make a nice curry, as do peas and cauliflower. Since I had only part of a cauliflower and a few mushrooms, I made a curry with all three vegetables, which I served it with okra fry.

Vegetable Biryani

I spent part of an afternoon assembling this biryani without a spice mix, my first such attempt. The result was pretty good. It contains tomatoes, cauliflower, green beans, potatoes, sweet pepper and carrot – and of course lots of coriander and mint.
